Good things come in fours; 44% wholemeal (40% wheat, 4% rye) with an addition of malted wheat flakes, cut malted rye grains and/or malted barley depending on current stock.

The higher wholemeal ratio, which includes a speciality strong wholemeal flour I use only for this loaf, allows for a higher recipe hydration. This results in a delicious and satisfying slice, balanced by the malty crunch.
